A hearty and comforting slow cooker casserole featuring ground beef, beans, corn, and topped with cheddar cheese and tater tots.

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 3 cups shredded cheddar cheese
- 2 cups tater tots
Instructions
- Brown the meat mixture: Start by heating a skillet over medium heat. Add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent. Drain any excess fat.
- Add ingredients to the slow cooker: Transfer the cooked beef mixture into your slow cooker. Pour in the drained black beans and corn, along with the can of diced tomatoes with green chilies. Sprinkle in the chili powder, cumin, salt, and pepper. Stir well.
- Layer the cheese: Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.
- Add tater tots: Arrange the tater tots in a single layer on top of the cheese.
- Cook to perfection: Cover your slow cooker and set it to low for 6 to 7 hours, or high for 3 to 4 hours, checking the last hour for doneness.
- Serve and enjoy: Once cooked, serve the casserole warm from your slow cooker.
Notes
Store leftovers in the fridge for up to 4 days. Can be frozen for 2-3 months.
