Ingredients

- 1 pound dried navy beans
- 6 slices bacon, chopped
- 1 medium onion, diced
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups water
Instructions
- Soak the navy beans in water overnight.
- Cook the bacon in a skillet over medium heat until crispy, then remove and drain.
- Sauté the diced onion in the reserved bacon fat until softened.
- Combine the soaked beans, crispy bacon, sautéed onion, maple syrup, brown sugar, ketchup, Dijon mustard, salt, black pepper, and water in the slow cooker.
- Set the slow cooker to low and cook for approximately 8 hours.
- Check the consistency of the beans and serve hot when done.
