Description

A refreshing summer mocktail combining tart lemons and sweet raspberries with fizzy sparkling water.


Ingredients

  • Fresh lemons (about 4 to 6, for 1 cup of juice)
  • Raspberries (1 to 2 cups, fresh or frozen)
  • Sparking water or club soda (3 to 4 cups, chilled)
  • Sweetener of choice: simple syrup, honey, agave, or sugar (2 to 4 tablespoons, adjust to taste)
  • Cold water (1 to 2 cups, to taste)
  • Ice
  • Optional: lemon slices, extra raspberries, mint, a tiny pinch of salt

Instructions

  1. Mash or blend the raspberries in a bowl with a fork or blend for a few seconds.
  2. Strain if seeds are undesirable, otherwise keep the fiber.
  3. Add lemon juice and sweetener, then stir well and taste.
  4. Stir in cold water to mellow the mixture, tasting for balance.
  5. Chill for 20 to 30 minutes; when serving, fill glasses with ice and pour the base halfway before topping with sparkling water.

Notes
