Description

A comforting dish of soba noodles coated in a rich, spicy peanut sauce, perfect for any occasion.


Ingredients

  • 200g soba noodles
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (or to taste)
  • 2 green onions, chopped
  • 1/4 cup chopped peanuts for garnish
  • Fresh cilantro for garnish

Instructions

  1. Cook the noodles by following the package instructions. Rinse them under cold water to stop the cooking process.
  2. Prepare the peanut sauce by whisking together peanut butter, soy sauce, sesame oil, honey or maple syrup, rice vinegar, and sriracha until smooth.
  3. Combine the cooled soba noodles with the peanut sauce in a large mixing bowl and toss gently to coat.
  4. Add the chopped green onions and toss again to combine.
  5. Serve the noodles in bowls, garnishing with chopped peanuts and fresh cilantro.
