Delicious strawberry rhubarb bars combining sweet strawberries and tart rhubarb for a comforting dessert.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup strawberries, chopped
- 1 cup rhubarb, chopped
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Combine the flour, softened butter, granulated sugar, salt, and baking powder until crumbly.
- Press half of this mixture into the bottom of the prepared pan.
- Mix the strawberries and rhubarb with brown sugar, cornstarch, and vanilla extract; layer over the crust.
- Sprinkle the remaining crumble on top.
- Bake for 35-40 minutes until golden and bubbly.
- Cool completely before slicing into squares.
