Description

Delicious strawberry rhubarb bars combining sweet strawberries and tart rhubarb for a comforting dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup strawberries, chopped
  • 1 cup rhubarb, chopped
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Combine the flour, softened butter, granulated sugar, salt, and baking powder until crumbly.
  3. Press half of this mixture into the bottom of the prepared pan.
  4. Mix the strawberries and rhubarb with brown sugar, cornstarch, and vanilla extract; layer over the crust.
  5. Sprinkle the remaining crumble on top.
  6. Bake for 35-40 minutes until golden and bubbly.
  7. Cool completely before slicing into squares.
