Description

Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sliced strawberries, chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice in a large skillet and cook over medium heat until bubbling.
  3. Mix the oats, flour, brown sugar, cinnamon, and melted butter in a separate bowl until crumbly.
  4. Sprinkle the oat topping evenly over the bubbling fruit in the skillet.
  5. Bake in the preheated oven for 30-35 minutes until the topping is golden brown and the fruit is bubbling.
  6. Remove the skillet from the oven and allow to cool slightly before serving.
