Description

A comforting and delightful banana bread infused with blueberries and topped with a crunchy streusel.


Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup flour (for streusel)
  • 1/4 cup oats (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Mix the mashed bananas, sugar, and melted butter until smooth.
  3. Beat in the egg and vanilla extract until well incorporated.
  4. Whisk together the baking soda, salt, and 1 cup of flour in a separate bowl.
  5. Add the dry ingredients to the banana mixture, stirring gently until just combined.
  6. Fold in the blueberries with a spatula.
  7. Mix the brown sugar, cinnamon, 1/4 cup of flour, and oats for the streusel until crumbly.
  8. Pour the banana bread batter into the greased loaf pan and sprinkle streusel on top.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Cool the bread in the pan for a few minutes before transferring it to a wire rack.

Notes

For added depth, consider using whole wheat flour or replacing sugar with honey. Great for sharing and can be paired with spreads.
