A comforting and delightful banana bread infused with blueberries and topped with a crunchy streusel.

- 2 ripe bananas, mashed
- 1 cup blueberries (fresh or frozen)
- 1/2 cup sugar
- 1/3 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup flour (for streusel)
- 1/4 cup oats (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Mix the mashed bananas, sugar, and melted butter until smooth.
- Beat in the egg and vanilla extract until well incorporated.
- Whisk together the baking soda, salt, and 1 cup of flour in a separate bowl.
- Add the dry ingredients to the banana mixture, stirring gently until just combined.
- Fold in the blueberries with a spatula.
- Mix the brown sugar, cinnamon, 1/4 cup of flour, and oats for the streusel until crumbly.
- Pour the banana bread batter into the greased loaf pan and sprinkle streusel on top.
- Bake for 60 minutes or until a toothpick comes out clean.
- Cool the bread in the pan for a few minutes before transferring it to a wire rack.
Notes
For added depth, consider using whole wheat flour or replacing sugar with honey. Great for sharing and can be paired with spreads.
