Ingredients
- Mahi Mahi fillets
- Pineapple juice
- Soy sauce
- Brown sugar
- Garlic, minced
- Ginger, minced
- Pineapple slices
- Green onions, chopped
- Salt and pepper to taste
Instructions
- Prepare the Marinade: In a bowl, combine the pineapple juice, soy sauce, brown sugar, minced garlic, and minced ginger. Stir gently to mix until the sugar is fully dissolved.
- Marinate the Mahi Mahi: Take your Mahi Mahi fillets and place them in the marinade. Allow them to soak for at least 30 minutes.
- Preheat the Grill: While the fillets are marinating, preheat your grill or skillet over medium heat.
- Season and Cook the Fish: Remove the fillets from the marinade, season with salt and pepper, and grill for about 4-5 minutes on each side.
- Grill the Pineapple: In the last few minutes, add the pineapple slices directly on the grill and cook until caramelized, about 2-3 minutes per side.
- Serve: Serve the Mahi Mahi topped with grilled pineapple slices and garnish with chopped green onions.
