Description

Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 tsp vanilla
  • 1 cup toasted coconut flakes
  • 1/2 cup pecans (chopped)
  • 1/3 cup brown sugar (for topping)
  • 3 tbsp melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare the baking dish.
  2. Combine boiled sweet potatoes, 1/2 cup brown sugar, 1/4 cup butter, and vanilla in a large bowl and mix until smooth.
  3. Pour sweet potato mixture into the prepared baking dish, spreading it evenly.
  4. Mix toasted coconut, chopped pecans, 1/3 cup brown sugar, and melted butter together for the topping.
  5. Sprinkle topping evenly over the sweet potato layer.
  6. Bake for 25-30 minutes until the topping is golden and the casserole is heated through.
