Description

A classic macaroni salad that is creamy, tangy, and filled with crunchy vegetables, perfect for gatherings and potlucks.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1/2 cup diced celery
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni by bringing a large pot of water to a boil. Add 2 cups of elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the macaroni and rinse it under cold water to stop the cooking process.
  2. Combine the cooled macaroni with 1 cup of mayonnaise, 1/4 cup of sweet pickle relish, 1/2 cup of diced celery, 1/4 cup of diced onion, and 1/4 cup of diced bell pepper in a large mixing bowl.
  3. Add 1 tablespoon of apple cider vinegar, and stir everything together until well combined. Adjust the seasoning with salt and pepper to taste.
  4. Chill the salad by covering the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving.

Notes

This salad can be customized with other vegetables or dressings as preferred.
