A classic macaroni salad that is creamy, tangy, and filled with crunchy vegetables, perfect for gatherings and potlucks.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sweet pickle relish
- 1/2 cup diced celery
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni by bringing a large pot of water to a boil. Add 2 cups of elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the macaroni and rinse it under cold water to stop the cooking process.
- Combine the cooled macaroni with 1 cup of mayonnaise, 1/4 cup of sweet pickle relish, 1/2 cup of diced celery, 1/4 cup of diced onion, and 1/4 cup of diced bell pepper in a large mixing bowl.
- Add 1 tablespoon of apple cider vinegar, and stir everything together until well combined. Adjust the seasoning with salt and pepper to taste.
- Chill the salad by covering the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving.
Notes
This salad can be customized with other vegetables or dressings as preferred.
