Description

A simple yet hearty homemade tomato sauce recipe, perfect for canning and preserving summer flavors.


Ingredients

Scale
  • 6 lbs fresh tomatoes
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1/4 cup bottled lemon juice or 1 tsp citric acid
  • Herbs (optional)
  • Canning jars
  • Water

Instructions

  1. Wash and sterilize canning jars thoroughly.
  2. Blanch the tomatoes in boiling water for about 30 seconds.
  3. Chop the blanched tomatoes and combine with lemon juice and salt.
  4. Cook the mixture over medium heat until boiling, approximately 15 minutes.
  5. Fill the sterilized jars with the hot mixture, leaving 1/2 inch headspace.
  6. Seal the jars, wipe the rims and process them in a water bath for 40-45 minutes.
  7. Cool and store the jars in a cool, dark place.

Notes

Ensure jars are well-sterilized and leave enough headspace when filling to avoid leaking. Customize with herbs for added flavor.
