Description

Crispy and flavorful potato skins filled with gooey cheese, bacon, and topped with sour cream and green onions, perfect for any gathering.


Ingredients

Scale
  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly.
  3. Pierce each potato several times with a fork.
  4. Rub the potatoes with olive oil, then sprinkle with salt and pepper.
  5. Place the potatoes in the air fryer basket and cook for 30-35 minutes.
  6. Allow them to cool for a few minutes, then cut in half and scoop out some of the flesh.
  7. Spray the insides of the potato halves with cooking spray and return to the air fryer for 5 minutes.
  8. Fill each skin with cheddar cheese and crumbled bacon.
  9. Return the filled skins to the air fryer for 3-5 minutes to melt the cheese.
  10. Serve warm, topped with sour cream and sliced green onions.

Notes

For variations, swap cheddar for mozzarella, use turkey bacon or tofu for vegetarian options, and Greek yogurt instead of sour cream.
