Description

This One-Pot Lasagna Soup combines all the hearty elements of traditional lasagna into a comforting soup that’s perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 28 oz marinara sauce
  • 4 cups chicken or vegetable broth
  • 14.5 oz diced tomatoes
  • 8 oz broken lasagna noodles
  • 1 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • Fresh basil, for garnish
  • Salt and pepper, to taste

Instructions

  1. Sauté the ground beef in a large pot over medium heat until browned. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.
  2. Add the marinara sauce, diced tomatoes, and broth. Season with Italian seasoning, salt, and pepper. Bring to a gentle boil and simmer for 5 minutes.
  3. Toss in the broken lasagna noodles, stirring well to combine. Cover and simmer for 10-15 minutes until the noodles are al dente.
  4. Mix in the mozzarella and Parmesan cheese until melted and well combined. Adjust seasoning as desired.
  5. Serve the soup warm, garnished with fresh basil. Enjoy with garlic bread or your favorite side dishes.
  6. Store leftovers in an airtight container in the fridge for up to 3-4 days.
