- 2 cups grated zucchini
- 1 cup grated summer squash
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Grate the vegetables by shredding zucchini and summer squash, then squeeze out excess moisture with a clean kitchen towel.
- Combine the grated zucchini, grated summer squash, flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper in a large bowl until well mixed.
- Heat a generous amount of oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown.
- Remove fritters from the skillet and place them on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
Ensure to squeeze out excess moisture from the vegetable mixture for a crispy fritter.
