Description

Delightful fritters made with fresh zucchini and summer squash, perfect as a snack or side dish.


Ingredients

  • 2 cups grated zucchini
  • 1 cup grated summer squash
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the vegetables by shredding zucchini and summer squash, then squeeze out excess moisture with a clean kitchen towel.
  2. Combine the grated zucchini, grated summer squash, flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper in a large bowl until well mixed.
  3. Heat a generous amount of oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
  5. Fry the fritters for about 3-4 minutes on each side, or until golden brown.
  6. Remove fritters from the skillet and place them on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.

Notes

Ensure to squeeze out excess moisture from the vegetable mixture for a crispy fritter.
