- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved

- 1/4 cup parsley, chopped

- Salt and pepper to taste
Instructions
- Prepare the vegetables and chickpeas by rinsing and draining the chickpeas thoroughly. Dice the cucumber and bell pepper, and halve the cherry tomatoes. Finely chop the red onion and parsley.
- Mix the rinsed chickpeas, diced cucumber, bell pepper, halved cherry tomatoes, finely chopped red onion, and fresh parsley in a large bowl.
- Make the dressing by whisking together olive oil and lemon juice, seasoning with salt and pepper.
- Combine the dressing with the salad mixture, tossing gently to ensure even coating.
- Chill the salad in the refrigerator for about 15 minutes before serving.
