- 1 cup grated zucchini
- 1 cup blueberries (fresh or frozen)
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup sugar (or honey)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup vegetable oil or melted coconut oil
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large mixing bowl, combine the grated zucchini, blueberries, sugar, oil, vanilla extract, and egg. Stir until well mixed.
- In another bowl, mix together the flour, rolled oats, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into your prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Let the bars cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
