Description

Ingredients

  • 1 cup grated zucchini
  • 1 cup blueberries (fresh or frozen)
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup sugar (or honey)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large mixing bowl, combine the grated zucchini, blueberries, sugar, oil, vanilla extract, and egg. Stir until well mixed.
  3. In another bowl, mix together the flour, rolled oats, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into your prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, checking for doneness with a toothpick.
  7. Let the bars cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
