- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 cup rice
- 2 cups chicken broth
- 1 large lemon (juice and zest)

- Chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken with salt, pepper, and oregano.
- Sear the chicken in a skillet with olive oil for about 5 minutes on each side until golden brown.
- Remove the chicken and add rice to the skillet, stirring for about a minute.
- Pour in chicken broth, lemon juice, and zest, stirring well.
- Combine the chicken back into the skillet with the rice and cover.
- Bake in the oven for 20-25 minutes until chicken is cooked through.
- Fluff the rice and serve garnished with parsley.
Notes
