Description

A comforting Greek dish featuring tender chicken breasts over fluffy lemon-infused rice, perfect for family gatherings or cozy nights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup rice
  • 2 cups chicken broth
  • 1 large lemon (juice and zest)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken with salt, pepper, and oregano.
  3. Sear the chicken in a skillet with olive oil for about 5 minutes on each side until golden brown.
  4. Remove the chicken and add rice to the skillet, stirring for about a minute.
  5. Pour in chicken broth, lemon juice, and zest, stirring well.
  6. Combine the chicken back into the skillet with the rice and cover.
  7. Bake in the oven for 20-25 minutes until chicken is cooked through.
  8. Fluff the rice and serve garnished with parsley.

Notes

For added flavor, marinate the chicken before cooking. Adjust cooking time if using brown rice.
