Description

A quick and flavorful one-pan skillet dinner featuring ground turkey, fresh spinach, and pantry staples. Perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 4 cups fresh spinach
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 medium zucchini, sliced (optional)

Instructions

  1. Heat a large skillet with a little olive oil over medium heat.
  2. Add ground turkey and season with salt and pepper. Cook until it is no longer pink and gets a little browned.
  3. Add chopped onion and cook for a few minutes until it softens.
  4. Stir in minced garlic and Italian seasoning. Cook for about 30 seconds.
  5. Add diced tomatoes and stir everything together. Let it simmer for a few minutes.
  6. Add sliced zucchini if using, and cook just until it is tender but still has some bite.
  7. Now add spinach in handfuls. Stir as it wilts down.
  8. Taste and adjust salt, pepper, and any extra seasoning you like.
