Description

A comforting and hearty Loaded Potato Taco Bowl filled with baked potatoes, seasoned meat, and fresh toppings.


Ingredients

Scale
  • 2 large potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the potatoes and pierce them with a fork. Rub with olive oil, salt, and pepper, then wrap in foil.
  2. Bake the potatoes for 45-60 minutes until tender.
  3. Cook the ground beef or turkey in a skillet over medium heat until browned. Drain off excess fat.
  4. Add the taco seasoning to the meat and stir according to package instructions.
  5. Fluff the baked potatoes and cut them open lengthwise.
  6. Assemble the bowls with seasoned meat, cheese, sour cream, salsa, avocado, lettuce, and tomatoes.
  7. Serve warm and enjoy with family!
