- 1 lb chicken breasts, diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, diced
- 1/2 cup feta cheese, crumbled
- Taco shells
- Fresh parsley for garnish
Instructions
- Heat the skillet – Begin by heating 1 tablespoon of olive oil in a skillet over medium heat. Allow the oil to warm but not smoke.
- Add the chicken – Add the 1 lb of diced chicken to the skillet. Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of paprika, and season with salt and pepper. Stir well, cooking until the chicken is golden brown and cooked through, approximately 7-10 minutes.
- Prepare the vegetables – While the chicken is cooking, take a bowl and combine 1 cup of halved cherry tomatoes, 1 cup of diced cucumber, and 1/2 diced red onion. Mix gently and set aside.
- Assemble the tacos – Once the chicken is cooked, it’s time to assemble the tacos. Take your taco shells and fill them generously with the cooked chicken. Top with the vegetable mixture and finish with 1/2 cup of crumbled feta cheese.
- Garnish and serve – Finally, garnish the tacos with fresh parsley. Serve immediately and enjoy!
Notes
These tacos are best enjoyed fresh but can be stored in the refrigerator for up to 3 days. You can freeze the cooked chicken mixture for up to 3 months.
