Description
A light and refreshing mocktail perfect for hot summer days, made with fresh watermelon, mint, and sparkling water.
Ingredients

- 3 to 4 cups cold watermelon cubes
- 1 to 2 tablespoons fresh lime juice, plus wedges for serving
- 6 to 10 fresh mint leaves, plus extra for topping
- 1 to 1.5 cups sparkling water or club soda, chilled
- Ice
- Optional: 1 to 2 teaspoons honey or simple syrup
- Optional: pinch of salt
Instructions
- Blend the watermelon until it is fully liquid. If your blender struggles, add a splash of sparkling water.
- Stir in lime juice and taste.
- Add mint gently, either muddling or stirring it in.
- Sweeten only if needed after tasting.
- Pour over ice, topping with sparkling water just before serving.
Notes
Chill glasses before serving for an extra refreshing experience. Optional garnishes include a mint sprig or a lime wheel.
