- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup diced tomatoes with green chilies
- 3 cups frozen tater tots
- 2 cups shredded cheddar cheese
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Brown the ground beef or turkey in a large skillet over medium heat for 5-7 minutes, draining any excess fat.
- Combine the black beans, corn, taco seasoning, diced tomatoes, salt, and pepper in the skillet and cook for an additional 5 minutes.
- Layer the meat mixture into the greased baking dish.
- Add the tater tots on top of the meat mixture, arranging them evenly.
- Sprinkle shredded cheddar cheese on top of the tater tots.
- Bake for 30-35 minutes until the tater tots are golden brown and cheese is melted.
- Garnish with chopped green onions before serving.
Notes
