Description

A comforting and hearty casserole combining the rich flavors of the Southwest with crispy tater tots, perfect for family gatherings or busy weeknights.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes with green chilies
  • 3 cups frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Brown the ground beef or turkey in a large skillet over medium heat for 5-7 minutes, draining any excess fat.
  3. Combine the black beans, corn, taco seasoning, diced tomatoes, salt, and pepper in the skillet and cook for an additional 5 minutes.
  4. Layer the meat mixture into the greased baking dish.
  5. Add the tater tots on top of the meat mixture, arranging them evenly.
  6. Sprinkle shredded cheddar cheese on top of the tater tots.
  7. Bake for 30-35 minutes until the tater tots are golden brown and cheese is melted.
  8. Garnish with chopped green onions before serving.

Notes
