Description

A flavorful and comforting dish featuring bell peppers stuffed with a savory mixture of chicken, rice, and pineapple, all drizzled with teriyaki sauce.


Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup diced pineapples
  • 1/2 cup teriyaki sauce
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
  2. Combine cooked rice, shredded chicken, diced pineapples, teriyaki sauce, and chopped green onions in a bowl. Season with salt and pepper.
  3. Stuff the filling into each bell pepper, pressing down gently.
  4. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25-30 minutes.
  5. Remove the foil and bake for an additional 10 minutes until tops are golden.
  6. Serve hot, garnished with sesame seeds if desired.
