- 4 large bell peppers
- 1 cup cooked rice
- 2 cups cooked chicken, shredded
- 1 cup diced pineapples
- 1/2 cup teriyaki sauce
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
- Combine cooked rice, shredded chicken, diced pineapples, teriyaki sauce, and chopped green onions in a bowl. Season with salt and pepper.
- Stuff the filling into each bell pepper, pressing down gently.
- Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until tops are golden.
- Serve hot, garnished with sesame seeds if desired.
