Description

A comforting Southern gravy made with fresh tomatoes, bacon grease, and creamy milk, perfect for serving over biscuits or rice.

Ingredients

Scale
  • 2 cups fresh tomatoes, chopped (or 1 can diced tomatoes)
  • 2 tablespoons bacon grease (or vegetable oil)
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: chopped onion or garlic for added flavor
  • Optional: chopped fresh herbs like basil or parsley

Instructions

  1. Heat bacon grease in a skillet over medium heat until melted and hot.
  2. Add flour to the hot grease and stir continuously to combine, cooking until lightly browned.
  3. Gradually whisk in the milk, stirring constantly to prevent lumps.
  4. Add chopped tomatoes to the skillet and bring to a gentle simmer.
  5. Season with salt and pepper, adjusting to taste.
  6. Allow the gravy to thicken to your desired consistency, stirring occasionally.
  7. If using, stir in optional ingredients like onion, garlic, or herbs and cook for a few more minutes.
  8. Serve warm over biscuits, rice, or your favorite dish.

Notes

For a lighter version, substitute bacon grease with vegetable oil. This gravy can be refrigerated for up to 4 days or frozen for up to 3 months.
